Orange Greek Yogurt Pancakes

When I am not eating oatmeal, protein pancakes satisfy my desire for breakfast and keep me full. As we are nearing summer, I decided to add some fresh variety with orange. I also omitted the whey protein as it can overpower other flavors. These orange Greek yogurt pancakes are light and citrusy, perfect for spring or summer breakfasts!

Orange Greek Yogurt Pancakes

Makes 3 pancakes

1/4 cup plain Greek yogurt

1/4 cup egg whites

1/2 cup oats

1 small banana

1/4 tsp orange zest

2 tsp orange juice

Blend all the ingredients in a food processor. Pour batter on to a lightly greased pan on medium heat. Flip after 3-4 minutes.

I served mine with the delicious (yet watery) combination of maple syrup, orange juice and a dash of cinnamon
